Eddy's Kitchen: Fish with Smoked Oyster Mayonnaise

I am pretty sure most of you have never tasted Fish with Smoked Oyster Mayonnaise, or even heard of it. Surely another hidden gem from Europe and probably The French! I catch a lot of Striped Bass so I am always looking for recipes that will work for my filets. Snapper, Redfish, Swordfish or even Speckled Trout would work great with this recipe. When I first saw this recipe, I scratched my head. Fish with Smoked Oyster Mayonnaise? What in the world? I jumped on Google and looked up Oyster Mayonnaise and up pops multiple recipes and references. I added the Smoked Oysters as they are readily available and easy to keep in the pantry. With a few iterations and modifications, I have a recipe I am happy with and I bet you will be also. As with almost all my dishes, I encourage you to experiment and adjust to your own taste. That said, this one is pretty darn delicious! Let's get started.

Ingredients:

4, 8 oz. striper filets cut in half widthwise

Unsalted butter

Olive oil

Salt and pepper

1 large lemon for both zest and juice

For the Mayonnaise:

1 large egg yolk

1 tbl Grey Poupon Dijon mustard

1 tbl white wine vinegar

Dash of cayenne pepper

1/4 tsp. salt

2/3 cup of sunflower oil. Note: I sometime use Canola oil or a mix of both as the Canola seems a bit lighter to me.

2 medium Smoked Oysters

1 tbl water

For the Salsa:

2 c chopped cherry tomatoes

2/3 cup finely chopped peeled and deseeded cucumber

1/3 cup finely chopped yellow bell pepper

1 tbl very finely chopped shallot

2 tbl lemon zest

2-3 tbl chopped fresh basil

2 tbl capers

1 tbl balsamic vinegar

3/4 tsp salt

1/4 tsp. black pepper

1 tsp. olive oil

Preparation:

First, make the Smoked Oyster Mayonnaise

In a small food processor (I use a 3 cup for this) place the white wine vinegar, egg yolk, salt, cayenne pepper and Grey Poupon Dijon mustard in the processor and mix thoroughly.

Add the oil a little at a time and mix until all oil is mixed and smooth and consistent throughout

Add the two Smoked Oysters and a tablespoon of water. Mix again until smooth and consistent

Cover and chill in the refrigerator for 30 min or up to 7 hours prior to serving

Next make the Salsa

Place the chopped tomatoes, cucumber, bell pepper, basil, capers, lemon zest and shallots in a medium glass bowl and mix

Add the balsamic vinegar, olive oil, salt and pepper and mix thoroughly

Cover and place in refrigerator. Remove and let warm (room temperature) before serving

Cook the fish

Season the fish on both sides with a little fresh ground black pepper and salt.

No more than 1 teaspoon total salt for all the filets. Golden rule: you can always add salt but can never remove it!!

In a large frying pan over medium heat, add one tablespoon olive oil and half the fish filets

Cook for about 3-4 minutes until brown and turn the filets over

Add one tablespoon butter to a corner of the pan and as it foams up, ladle over the filets until cooked throughout. About another 3-4 minutes

Remove and splash with fresh lemon juice. Keep warm

Add another tablespoon olive oil and repeat the same process with other half of fish

Serve

Remove the Smoked Oyster Mayonnaise from refrigerator and stir with a spoon.

Place one to one and a half tablespoon one a plate and smooth to about 2 inches across

Place two filets on the Mayonnaise to form an X

Add a large spoonful of the Salsa over the fish

Ideas to serve with

A variety of potatoes such as mashed or small golden that are boiled

Some type of green such as broccolini or asparagus

Buttered corn or corn on the cob

Bread, I think y'all know by now, Homemade Sourdough goes with half my meals!
